VEGGIE BALLS & TOMATO SAUCE

If there's something that makes me mad is putting unused food in the bin.
Everything can be recycled, re-used to give an added value to a recipe, just need to experiment a bit.
Stale bread will become our best friend, let's discover how to use it to create the veggie balls VS food waste!
I'll never forget all the breakfasts of my childhood at my grandma place (da Nonna Anna):
stale bread wetted with water to make it softer, seasoned with just picked up tomatoes and EVOO.
I could'n ask for a better nutritional education!

Grazie Nonna!

Ingredients for the Veggie Balls

Ingredients for the Tomato Sauce

Peel the aubergine and chop it up into big pieces together with the pepper and cook them with steam.
While waiting for the veggies to be ready put the brad in a bowl and add some water to make it soft.
When the bread has became soft, eliminate as much water as you can.
Put the veggie in a colander to get rid of the excess water and put all the ingredients together.

Now that you have your "dough" start creating the balls. Help your self greasing your hands with some EVO. When the balls are ready you can prepare the tomato sauce starting from the saute' of EVOO and shallots and then adding the can of tomatoes. Season with salt and fresh herbs (basil / sage) and let it cook for 5 minutes.
When the sauce starts to "boil" add gently (!!) the balls and cover up the pot and cook for 15 minutes on feeble fire.

Ta daan! ready!
